Mama's Mini Frittatas

In our family we make mini fritattas with anything we have on hand even leftovers from the night before. This is one of our favorites! These cute little frittatas are great nutrient dense breakfast or mid morning snack for kids and adults alike.

 
Mama's Mini Frittatas
(Makes approximately 24)
6 Pasture raised organic eggs.
1/2 C pasture raised cows, goats or coconut Milk.
1/4 C of pasture raised organic goat cheese.
2-3 Tbs pesto - store bought or make your own with the simple recipe below.
Salt n Pepper.

1. Preheat Oven 350 Degrees. Grease mini muffin tin with ghee, coconut oil or butter.
2. Beat eggs, beat in milk, add salt and pepper.
3. Fill the mini muffin tins 1/2- 2/3 of the way up with a small ladle.
4. Add a dollop of pesto and goat cheese to the center of each frittata so that it fills even with the rim.
5. Transfer to the oven and bake until they are set about 12-15 minutes.

Vegan Pesto
1C of Fresh Basil Leaves
1/2 Cup Pine Nuts or Walnuts
1-2 Cloves of Garlic
1/4C Olive Oil
Salt n Pepper

1. Pulse nuts in food processor, add garlic and pulse, add and pulse. Drizzle in olive oil slowly as you blend. Add salt n pepper to taste.


What's good about pasture raised eggs?
Put simply pasture raised hens are free to roam green pastures and eat sprouts and seeds as nature intended, therefore they are much healthier all around and lay much more nutrient dense eggs.

When comparing a conventional egg to an egg from pasture raised hen it has been found that pasture raised eggs are higher in folate and B-12. It is important to get enough folate while pregnant to help protect against neural tube defects, preterm delivery and low birth weight. B-12 works with folate to help reduce the risk of birth defects and produce healthy red blood cells. B-12 is key in maintaining a balanced nervous system, normal digestion as well as carbohydrate and fat metabolism.
 
Pasture raised eggs also have 7x's more Beta Carotene, 3X's more Vitamin E, 2x's more Omega 3's, and 2/3's more vitamin A than conventional eggs. In addition research shows that pasture raised eggs are less likely to be contaminated by salmonella then conventional eggs. In essence we are not getting as much nutrition from 3 or 4 conventional eggs as we from one egg laid by a hen in an open pasture! Same goes for all pasture raised animal products, you will simply be getting more nutrition, which translates to a healthier family. Try them to taste and feel the difference!

Why do some pregnant mama's and kids prefer goat products? 
Many people find that goat milk/cheese/butter are easier to digest than cow milk/cheese or butter. The main reasons are that it's naturally homogenized, contains less lactose, different minerals and smaller/softer proteins. Note that goat's milk is lower in folate and B-12 so be sure to be getting those in from other foods such as eggs!
